Aloo tamatar ki sabji | Potato Tomato Curry | ऐसी आलू टमाटर की सब्जी की बस खाते रह जायेंगे

This recipe is cooked very much at parties and weddings, even if you feel like eating something different in your daily routine, you can try it. The children also like it very much. You can make spices at home or you can take them from the market, I have prepared some spices here at home.

Ingredients:

  • 6 boiled potatoes
  • 2 tomatoes
  • 1 inch ginger slice

Spices:

  • one teaspoon turmeric
  • half teaspoon whole cumin seeds
  • half teaspoon mustard seed
  • one pinch Asafoetida
  • one teaspoon Fenugreek leafs
  • one teaspoon coriander, cumin, black pepper powder
  • one teaspoon Kashmiri red Chilies

Process :


Will chop the tomatoes first. After that grate ginger.
After this, we will heat the karahi (Pan) and add two spoons of mustard oil to it.
After the oil is well heated, add whole cumin and mustard seeds. Allow the mustard and cumin seeds to crackle, it tastes very good.
Keep the flame on medium.
After about 3 to 4 seconds, cumin and mustard seed (rye) will crack well. After that add a pinch of asafoetida. Mix them well and add turmeric, followed by black pepper and cumin powder.
Keep stirring the spices so that they do not burn. After this, Kashmiri red chilli powder will be added.
After mixing all these, you will add grated ginger to it. After adding ginger, add tomatoes to it. We will mix them all together.
Keep in mind that the flame should be on medium so that the spices and tomatoes mix well.
After 1 minute, add salt according to taste.
Will melt the tomatoes properly and cook for about 1 minute. Keep in mind that the flame is medium.
After cooking for about 5 minutes, the spices are fried well.
Now add chopped potato to it and mix them all well.
Keep in mind that the potato should not break more because the potato is boiled.
After that, fry it on high flame for about 1 to 2 minutes.
After roasting, we will reduce the heat to medium.
Now let me tell you the tip here: -

1. If you add one teaspoon of chaat masala to it, the vegetable test will be very good.
2. It will also add one teaspoon of Kasuri fenugreek which will greatly increase its test.

I have used chaat masala in the recipe, so when adding salt, we will keep in mind that there should not be much salt.
Now the vegetable is well fried, so we will add 1.5 bowls of water in it.
After adding water, stir slowly so that the spices, potato and water mix all together. After this, cook for 2 minutes on medium flame. After cooking for 2 minutes, we will stir the vegetable well and cook for another 2 to 3 minutes without covering it.

Our potato tomato curry is ready, now we will offer it to Lord Krishna.
